Drop github-copilot from .truthmark/config.yml and let the init lifecycle
prune the 29 generated surfaces it owned, then remove the leftover
.github/copilot-instructions.md preamble.

Copilot remains a supported platform of the product. Only this
repository's installation changed, so allPlatforms render assertions keep
their Copilot coverage; the checked-in path lists in
tests/templates/generated-surfaces.test.ts follow what this repository
actually installs and drop their .github entries.
