* fix(daemon): bound macOS watcher file descriptors

* fix(daemon): preserve symlink roots and refresh Nix hashes

Keep the watch-root exemption ahead of the symlink traversal guard and lock the behavior with a real directory-symlink assertion. Refresh the daemon and web pnpm dependency hashes reported by the failing Nix build.
