fix: remove duplicate uppercase docs paths for macOS compatibility
The repository had both uppercase (e.g., docs/User-Guide/) and lowercase (e.g., docs/user-guide/) paths tracked, causing persistent dirty state on case-insensitive filesystems (macOS, Windows).
